Veggie Soup

INGREDIENTS

  • 1 pound tofu
  • 1 (12 oz) can tomato paste
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 potatoes, diced
  • 1 (12 oz) bag frozen corn
  • 1 (12 oz) bag frozen green beans
  • 1 pinch ground ginger
  • 1 pinch salt & ground black pepper


INSTRUCTIONS

  • Crumble the tofu into a large saucepan over medium heat. Cook and stir.

  • Pour in the tomato juice, add carrot, onion, potato, green beans and corn.

  • Season to taste with salt, ginger and pepper.

  • Reduce the heat to low and allow to simmer.
