Veggie Soup
INGREDIENTS
- 1 pound tofu
- 1 (12 oz) can tomato paste
- 1 onion, chopped
- 2 carrots, chopped
- 2 potatoes, diced
- 1 (12 oz) bag frozen corn
- 1 (12 oz) bag frozen green beans
- 1 pinch ground ginger
- 1 pinch salt & ground black pepper
INSTRUCTIONS
- Crumble the tofu into a large saucepan over medium heat. Cook and stir.
- Pour in the tomato juice, add carrot, onion, potato, green beans and corn.
- Season to taste with salt, ginger and pepper.
- Reduce the heat to low and allow to simmer.
